“A WISE AND DELICIOUS RECIPE”

NADA’S VEGETARIAN CABBAGE ROLLS
1 large head cabbage

STUFFING:
2 cups cooked and drained red, kidney, or garbanzo beans
1 cup Tomato Sauce
1 egg white
1 cup chopped onion
1 tablespoon parsley flakes
1 cup diced celery
1/2 teaspoon garlic flakes
1/2 cup partially cooked brown rice (to partially cook, boil vigorously 10 minutes in 11/2 cups water; drain)
One 16-ounce can of whole tomatoes, drained and chopped finely
1/4 teaspoon oregano flakes
1/8 teaspoon pepper

SAUCE:

One 28-ounce can of tomatoes packed in puree (blended 5 seconds in blender)
1 stalk celery, diced
1 tablespoon parsley flakes
1/8 teaspoon garlic flakes

Place whole cabbage in a large pot, add 1 cup water, cover tightly, and steam until cabbage leaves can be separated (about 20 minutes). Mix all stuffing ingredients together. On each cabbage leaf, place a small amount of stuffing (about3tablespoons), tuck in ends, roll up, and place in shallow baking dish. Largest leaves may be cut in half to keep rolls more or less uniform in size. Combine sauce ingredients. Chop unused center of cabbage, and add 1/2 cup of this chopped cabbage to sauce. Pour sauce over cabbage rolls, cover, and bake 25 minutes at 350°. Remove cover and bake 20 minutes more. Makes about 16 rolls. Serves 8.

The Situation
He/she is at a Restaurant gain, it’s Thursday; and you’re in Cleveland. How do these Professional Entertainers control their diabetes when they eat out 3 or 4 nights a week? Is there a natural diabetic diet that they can find hidden in the menu?

First, the Secret—I will tell you right now.
The Waiter wants you to take over control of the evening. Till him, “Forget about it.” God knows…you know food! Manage the dining experience and have it your way. People will see you as the leader, and they will have no clue that you and they are eating a health diabetic meal.

So, Mr. Professional waiter, “Listen up.”
Talk with the Waiter. He’ll be your best friend through the evening. Let him know that you will be planning the evening. Your role is to manage the process. Don’t let him rush the ordering or the courses. This way you will:
Not order too much
Not eat too much
You will get what you want, healthy foods
Served in the portions your want
It will be prepared the way you want

Don’t let them load you down with bread rolls and butter right at the start. Stop the second and third deliveries of bread. Have them bring fresh lettuce and carrots—you know the drill!
