“A WISE AND DELICIOUS RECIPE”

STOVE-TOP STUFFED PEPPERS
6 large green peppers
2 egg whites, beaten
1 cup tomato juice
1/2 teaspoon celery seed
2 cups cooked brown rice
1/4 teaspoon fresh ground pepper
1/2 pound leanest ground beef

Cut tops off peppers and remove seeds and ribbing. Mix 1/3 of the tomato juice with the remaining ingredients, and stuff peppers with this mixture. Stand peppers up in a saucepan and pour remaining tomato juice over top. Cover tightly and simmer until peppers are tender (45 minutes to 1 hour), adding liquid if necessary to prevent scorching. Serves 6.

ROAST LEG OF LAMB
Because of its high fat content, lamb is normally to be avoided.
Leg of lamb, however, is usually as low or lower in fat than most
cuts of beef. Choose “ungraded” or “good” grades rather than
“choice” or “prime,” because of their low fat content. Roast lamb
fixed this way is delicious, and a welcome change of pace.

2-to-3-pound leg of lamb, preferably with a short shank
1/2 teaspoon basil
1/2 teaspoon chervil
1/2 teaspoon onion powder
1/2 teaspoon dried rosemary
11/2 tablespoons parsley flakes
1/8 teaspoon fresh ground pepper
1 tablespoon mint flakes
2 table spoons vermouth

Remove all visible fat, then reassemble roast. Bone may be left in.
Crumble together dried herbs and seasonings, and moisten with
vermouth. If time permits, allow mixture to blend for a few
minutes. Preheat oven to 550°. Massage lamb roast with seasoning
mixture (it will be messy and pasty), working seasonings into all
meat surfaces. Moisten and wring out a single layer of cheesecloth
approximately 2′ x 3′, and wrap it around the roast. All roast
surfaces should have two or three layers of cheesecloth covering
when this has been done. Roast in large roasting pan, turning oven
down to 325° when roast is put in. Baste with water or a
half-and-half mixture of water and vermouth. Cheesecloth should
remain moist at all times. Use bulb baster to baste roast with its
own drippings, tipping pan and placing end of baster at bottom of
liquid to avoid getting any fat that may have drained off roast.
Allow 25 to 30 minutes per pound. Remove, discard cheesecloth, and
serve.
